Chef Blythe Beck is no shrinking violet.

The executive chef and co-owner of Pink Magnolia in Oak Cliff in Dallas specializes in Southern food with great big flavor profiles, and the chef will make the trek back to Denton to for the Guest Chef Day at the University of North Texas’ Club at Gateway Center.

Beck, a UNT alumna, will cook with UNT hospitality students for lunch April 5 at UNT’s Gateway Center, 801 North Texas Blvd. Diners will be seated between 11 a.m. and 12:15 p.m.

Friday morning, sophomore Lesia James made her regular stop in Suite 200 of the Old Main Building at Texas Woman’s University.

Inside the TWU social work program’s office is a discreet refrigerator stocked with produce from Johnson’s Backyard Garden, and a large office closet with shelves of dry goods. Students and employees can go into the pantry, past Nila Ricks’ office, and take as much food as they need. No questions asked.

James always checks the fridge first, looking for fresh vegetables and fruits for her teenage son. She wants to teach him healthy habits. Then it’s on to the pantry, where she can grab toilet...

UNT Students Seek Elusive Albino Squirrel On Campus

Some University of North Texas students are squirreling around on campus in search of an Albino squirrel they believe brings luck for finals.

“It exists. I do believe in Santa Clause,” said student Beau Carter, who saw the elusive, rare squirrel outside of the school’s library. “The bushy tail… it was definitely in the tree though… this was seven or eight months ago.”

Campus legend says seeing the albino squirrel means an “A” on a student’s next test. A true living legend, the albino squirrel even has his own Twitter page with 316 followers respectively.
