ARTICHOKE (GLOBE)
(Cynara scolymus)

Soil pH 6.0 Start the seeds inside 8 weeks before the last spring frost.  Transplant into the garden after the last spring frost, spacing 2-3 feet apart.  Cut back in the fall and mulch to protect from the winter weather.  You may harvest your crop the following spring.   Perennial to Zone 7.

#2501 - GREEN GLOBE  (Tender Perennial) - The 3 to 6 foot plants produce large flower heads that are 3–4 inches in diameter.  The flower buds have thick, fleshy scales and solid centers.  Should be harvested when young.

#2502 - PURPLE ITALIAN GLOBE - (Cynara scolymus) 150 days - As ornamental as it is delicious, the purple-headed fruits of this Italian variety are more tender than green ones. The plants are tolerant to both heat and cooler temperatures. Baby chokes may be steamed whole, although larger ones should be separated before cooking. As with other purple veggies, the color fades upon cooking.

ASPARAGUS

2520 - MARY WASHINGTON  - This perennial is the most widely grown variety of asparagus in the U.S. The long, straight spears have nice, tight tips. Excellent when roasted, steamed, or lightly sauteed in stir-frys. Soaking the seeds overnight will produce better germination. Please allow 3 years for this perennial to produce at full capacity - it will be worth the wait!

CARDOON
(Cynara cardunculus)

Soil pH 6.5 – Start the seeds inside 4-6 weeks before the last spring frost.  Transplant outside 2 weeks after the last spring frost, spacing 3 feet apart.   When the plants reaches 2-3 feet high,  wrap paper or burlap around the leaf stalks to blanch them; proceed to harvest in 4 weeks.

#2601 - CARDOON 75-100 days This celery-like plant is actually a member of the artichoke family. The stalks have a very piquant flavor!  The hearts and stalks are delicious when parboiled.  A very popular vegetable in French cuisine!

CELERY and CELERIAC
(Apium graveolens)

Soil pH 6.5 - Start the seeds inside 8 to 10 weeks before the last spring frost. Transplant outside after all danger of frost has passed.  Space the transplants 6-8 inches apart, in rows with a distance of 2 to 3 feet between them.  Celery likes plenty of water during the growing season.

#08 - GOLDEN PASCAL CELERY 90-115 days - The thick, heavy stalks of this heirloom are crisp and sweet. The tall, 24 – 28 inch plants self-blanch the tender, pale yellow/green stalks. A good choice for home gardens.

#09 - GIANT PRAUGE CELERIAC  115 days – Introduced in 1871, this old variety grows 2 to 4 inch, white, round roots, with a taste similar to celery.  The delicious globes store well in the fall, and make a tasty addition to soups and stews.  The hollow stalks are not used however, but add value to the compost pile.

#05 - GOLDEN SELF BLANCHING CELERY   85 days - This variety grows 25 to 30 inches tall and is full-hearted with pale yellow/green stalks. The crunchy, 9 inch ribs are extra large and thick, without strings.  Delicious!

#06 – TENDERCRISP CELERY 90-105 days – A great choice for the home garden!  The 24-36 inch plants are compact, with smooth, tall, thick dark-green stalks that stay crisp.  High yielding!

#O07- UTAH  70-125 days – Crunchy and stringless, this vigorous green variety has thick, well-rounded stalks and tightly folded hearts.  Great grown for fall use!

SPINACH
(Spinacia oleracea)

Soil pH 6.5 to 7.0 - Sow the seeds outside 6 to 8 weeks before the last spring frost.  Using a wide row method for planting, sow 2-3 seeds every 3 inches, going in all directions. Once the seeds sprout, thin to one plant every 3 inches. In as little space as 3'x 3', you can harvest from over 120 spinach plants !!  To avoid insect damage, we recommend covering the entire row with a floating row cover at planting time.  Remove the cover temporarily to thin the plants and then recover until harvest time.  As the weather warms up, sow spinach seeds in a shaded location, as it quickly bolts once the temperature rises above 75 degrees F .   And don't forget to plan a fall crop!  Sow 4 to 6 weeks before the first expected fall frost - spinach loves the cool weather of autumn!

#911 - AMERICA   50 days - This "All American Selection" winner of 1952 stays sweet, even in warm weather! The dark green, crumpled leaves grow rapidly on these 8 inch plants.  Delicious!

#913 - BLOOMSDALE LONG STANDING 46 days - This heirloom variety was first introduced in 1908 and still remains very popular!  The thick-textured leaves are of fine quality, very crinkled and dark green in color. A slow bolting spinach that is heavy yielding.  Excellent variety for either fresh or canned!

#918 – BLOOMSDALE SAVOY   45-50 days This very fast growing variety is consistently a heavy yielder! The large, medium green, savoyed leaves are of high quality, and resistant to blight and blue mold.  This very cold hardy spinach makes it an excellent choice for the backyard garden!

#910 - GIANT THICK LEAFED 55 days - This old variety has dark green leaves on spreading plants.  A very prolific spinach that has huge, thick, smooth leaves.  A slow bolting spinach that's good either fresh in salads, or canned!

#O920 MONNOPA   (Low Acid)  45-60 days -  Always tender and tasty, this round-leaf variety has very little oxalic acid in its leaves, making it one of the sweetest available. An excellent source of vitamins A,C and E. Healthy and nutritious!

#909 - STRAWBERRY SPINACH  (Chenopodium capitatum) 40 days  - Also known as “Strawberry Blite”, the delicate saw-toothed leaves and stems grow on 1½ foot plants, and are equally delicious eaten raw or steamed. The tiny red fruits on the plants are tasty in salads.

EVERBEARING SPINACH

#915 - NEW ZEALAND SPINACH  Tetragonia Expansa  55-70 days -  Not a true spinach, but similar in flavor and use.  A European favorite since the 1770's!  The large plants have small fleshy green leaves that are sweet and tasty. This spinach is slow to germinate; soaking the seeds in water for 24 hours before planting will hasten germination. This one thrives in hot weather!  Pick the top leaves for fresh greens all summer!

#919 RED MALABAR  Basella rubra  50-70 days  - A nice alternative to "true" spinach when the weather gets too hot. A perennial from India, this heat-loving, branching climber has red leaf veins and stems. Cut the sprouts to eat raw in salads or sautee` lightly for greens. Used as a thickener in the Orient, and also in place of okra in the South.  Regrows rapidly.

SWISS CHARD
(Beta vulgaris, cicla group)
