Violation: Some prepared sandwiches were found in a refrigerator with internal product temperatures of 45oF. While the food temperature was acceptable, the depth of the sandwiches (3 deep) on the trays should be limited to two.
Recommendation:Potentially hazardous food prepared in advance shall be stored at a depth which promotes rapid cooling. Preferably, the sandwiches shall be rapidly cooled to 40oF.
*Inspections scores of 85 or lower are NOT satisfactory
