How Do I Get a Copy of the
USDA's Complete Guide to Home Canning?
The Complete Guide to Home Canning is Agriculture Information Bulletin (AIB) No. 539 released by the U.S. Department of Agriculture, Extension Service. Beginning with the 1994 revision of the Complete Guide to Home Canning, color copies of this book were not printed or sold by the Government Printing Office. Some state Extension Services periodically sold print copies of the book.
The book may be printed off the National Center for Home Food Preservation website at http://www.uga.edu/nchfp/publications/publications_usda.html. It is broken into multiple smaller files, titled from Introduction through Guide 7. When USDA releases a new version, it will be available at this same site.
We are hoping there will be a new USDA Complete Guide to Home Canning sometime in the next year. If you still want to buy the 1994 (current) edition, there are two sources we can send you to.

The “How do I…..” pages of this National Center for Home Food Preservation website also contain the individual USDA procedures for specific foods under “How do I…..Can,” “How do I….Ferment,” “How do I…..Pickle,” and “How do I…..Make Jam & Jelly.” There are some additional products in these sections, but each procedure is footnoted with the source.
WARNING: The 1994 revision of the Complete Guide to Home Canning contains updated information that is critical to the safety of some recommended processes. We do not recommend that you use former versions of this book or older USDA bulletins with other titles.
OPTION: The fifth edition of So Easy to Preserve from the University of Georgia Cooperative Extension Service incorporates the changes from the 1994 revision of the Complete Guide to Home Canning. It also contains additional products developed by the National Center for Home Food Preservation over the past six years. In addition to home canning information, So Easy to Preserve also contains information on and directions for freezing and drying foods at home.
