Bolsa’s chef Andrew Bell to move to Bistro 31 in Highland Park

“I don’t expect [Andrew] Bell to stay at Bolsa forever,” wrote DMN restaurant critic Leslie Brenner in an April 2014 three-star review of Bolsa. Precisely: The chef is headed to Bistro 31 in late October or early November, confirms a spokesperson for the Highland Park Village restaurant.

Bistro 31 launched a new menu in late September, and Bell will not make any major changes to that menu. (See it below.) He may create new specials.

Bell will work with restaurateur Avner Samuel, who is a new consultant for Alberto Lombardi’s restaurants Bistro 31, Taverna, Toulouse and Sangria. Samuel and Carlo Allesina will oversee day to day operations at Bistro 31, the spokesperson says.

Bell’s title will be chef of Bistro 31. Cravedfw and SideDish previously reported on Bell’s new position.

Bolsa hasn’t named its next chef yet.
