When the school day is done, my house gets packed with neighborhood kids. The girls come over to bake cookies in my kitchen and the boys crowd around the Xbox 360. All of them are hungry for something quick to eat that will hold them over until dinnertime and they all know that they are my recipe guinea pigs. (You can insert the evil mother laugh here.)
My latest quickie recipe is for
moist muenster corn muffins. These muffins are made with corn muffin mix and have muenster cheese and cream style corn in them. The result is a moist cornbread that the kids loved. These are great afternoon snacks because the muffins are loaded with sugar and, with the crowd of kids, they each get to eat 1 to 2 each, leaving room in their bellies for dinner.

Dried, pitted dates are a delicious alternative to raisins. Dates are also a good source of fiber, which is something we older folks tend to look for. Using dates in place of raisins is as easy as equally replacing the amount of raisins called for in a recipe with chopped dates. For example, the 1 cup of raisins in my
raisin casserole bread can be replaced with 1 cup of chopped, pitted dates. If you're looking for a bread recipe that specifically calls for dates, try my
brown sugar date bread. The recipe calls for a half cup of chopped dates and a 1/4 cup of whole wheat flour.

Some nights I am just too tired to bake a time-consuming dessert for my family. After dinner is eaten and the dishes cleared, all I want to do is sit in the living room and watch a movie with my kids.
Cinnamon biscuit mix puffs are a quick dessert or snack that I can quickly make for everyone. They muffins are easily mixed up by my kids, baked, and then rolled in butter and cinnamon sugar. The taste is delicious and the soft texture of each muffin is incredible.

Cold, winter nights are perfect for movie time with the whole family. Everyone gets to snuggle up on the sofa, inhale buttery popcorn and snack on a delicious, sweet treat.
Cinnamon twists are a favorite movie snack in my home. The little breads are coated in cinnamon sugar and twisted perfectly for grabbing out of the basket. What's more, baking cinnamon twists helps warm the home and fills it with the heady smell of cinnamon.
