Site: Pantry-International Cafe
Violation: The backflow prevention device for the pre-wash spray hose was leaking at the intermediate vent. The device was replaced during the inspection.
Recommendation: Maintain backflow prevention devices in good repair.

Site: Buffet-Consumer Advisory
Violation: The consumer advisory for the egg station was not specific to the eggs cooked to order.
Recommendation: If an animal food such as beef, eggs, fish, lamb, milk, pork, poultry, or shellfish that is raw, undercooked, or not otherwise processed to eliminate pathogens is offered in a ready-to-eat form or as a raw ingredient in another ready-to-eat food, ensure the consumer is informed by way of disclosure using menu advisories, placards, or other easily visible written means of the significantly increased risk to certain especially vulnerable consumers eating such foods in raw or undercooked form. Locate the advisory at the outlets where these types of food are served. Ensure that disclosure is made by one of the two following methods: (1) On a sign describing the animal-derived foods (e.g., "oysters on the half-shell," "hamburgers," "steaks," or "eggs"); AND that they can be cooked to order and may be served raw or undercooked; AND a statement indicating that consuming raw or undercooked meats, seafood, shellfish, eggs, milk, poultry may increase your risk for foodborne illness, especially if you have certain medical conditions. Ensure the advisory is posted at the specific station where the food is served raw, undercooked, or cooked to order.

Site: Room Service-Consumer Advisory
Violation: There was no consumer advisory on the room service menu. There was cold smoked salmon and hamburgers that could be cooked to order on the menu.
Recommendation: If an animal food such as beef, eggs, fish, lamb, milk, pork, poultry, or shellfish that is raw, undercooked, or not otherwise processed to eliminate pathogens is offered in a ready-to-eat form or as a raw ingredient in another ready-to-eat food, ensure the consumer is informed by way of disclosure using menu advisories, placards, or other easily visible written means of the significantly increased risk to certain especially vulnerable consumers eating such foods in raw or undercooked form. Locate the advisory at the outlets where these types of food are served. (2) On a menu using an asterisk at the animal-derived foods requiring disclosure and a footnote with a statement indicating that consuming raw or undercooked meats, seafood, shellfish, eggs, milk, or poultry may increase your risk for foodborne illness, especially if you have certain medical conditions.

Site: Pantry-Pantry 9334 - Acommodation Locker
Violation: More than 15 packages of bottled water and more than 30 boxes of soda were stacked directly on the deck.
Recommendation: Protect food from contamination by storing the food: (1) Covered or otherwise protected; (2) In a clean, dry location; (3) Where it is not exposed to splash, dust, or other contamination; and (4) At least 15 centimeters (6 inches) above the deck.

Violation: The front panel of the orange juicing machine was cracked in several places. It was not in use during the inspection.
Recommendation: Replace the front panel of the juicing machine.

Site: Other-Trident Grill & Pizzeria
Violation: In the technical compartments below the front counters in both of these food outlets, the area around the base of the compartment was not sealed and was open to below the adjacent cabinets and into the area behind the service counter.
Recommendation: Close and seal the area around the base of the technical compartments.

Site: Room Service-
Violation: The sanitizing solution in a bucket in the dishwash area was measured at less than 50 ppm. The solution was replaced.
Recommendation: Ensure sanitizing solutions are used with the following concentrations: (1) A chlorine solution with a concentration between 50 mg/L (ppm) and 200 mg/L (ppm).

Site: Buffet-
Violation: In the passageway with the back-up hot trolleys, there were 3 fryer baskets stored in a locker on the same shelf as paperwork, a power cord and other non-food items. The fryer baskets were removed.
Recommendation: Store cleaned equipment and utensils, laundered linens, and single-service and single-use articles: (1) in a clean, dry location; (2) in a location where they are not exposed to splash, dust, or other contamination; (3) at least 150 millimeters (6 inches) above the deck.

Site: Galley-Sabitini's
Violation: An upright neutral locker had clean equipment, binders and paperwork stored along with clean food equipment on one shelf. The non-food items were moved.
Recommendation: Store cleaned equipment and utensils, laundered linens, and single-service and single-use articles: (1) in a clean, dry location; (2) in a location where they are not exposed to splash, dust, or other contamination; (3) at least 150 millimeters (6 inches) above the deck.

Site: Preparation Room-
Violation: The water temperature at both handwashing stations was measured at 90°F. The temperature was raised during the inspection.
Recommendation: Ensure handwashing sinks are equipped to provide water at a temperature of at least 38°C (100°F) through a mixing valve or combination faucet. For handwash sinks with electronic sensors, and other types of handwash sinks where the user cannot make temperature adjustments, ensure the temperature provided to the user after the mixing valve does not exceed 49°C (120°F).

Violation: The door to the food worker toilet room did not completely close on its own. This was corrected during the inspection.
Recommendation: Ensure toilet rooms are completely enclosed and have tight-fitting, self-closing doors which are kept closed except during cleaning or maintenance.

Violation: There was a vertical opening that extended from the deckhead to the deck on the bulkhead next to the entrance door. Also, there was no coving at the deck/bulkhead junctures of the locker. Food was stored in this locker.
Recommendation: Cove all bulkhead/deck, equipment/deck, cabinet/deck, and deck sink coaming/deck junctures (including galleys, pantries, buffets, bars, waiter stations, dining room work counters, provisions, food storage rooms, equipment/utensil storage rooms, and toilet rooms intended for use by galley personnel).

Violation: There was a vertical opening that extended from the deckhead to the deck on the bulkhead next to the entrance door. Also, there was no coving at the deck/bulkhead junctures of the locker. Food was stored in this locker.
Recommendation: Either construct the room to food area standards as described above, or remove all food from the room.

Site: Housekeeping-Deck 7 Forward Princess Theater Public Restrooms
Violation: There were no signs advising users to use hand towel, paper towel, or tissue to exit the handicapped stall located inside the toilet room. There was a handwashing station inside the stall.
Recommendation: Post a sign advising users of toilet facilities to use hand towel, paper towel, or tissue to open the door unless the exit is hands free.
