Taco Nachos
Ingredients
- 1 pound of 93 percent lean ground beef
- 1 package taco seasoning
- 1 bag large bag of tortilla chips
- 1 (16 oz.) package shredded cheddar or Mexican blend
- Shredded iceberg lettuce (about 1/2 a medium head)
- 2 to 3 medium ripe tomatoes, chopped
- 1 jar pickled jalapeno pepper slices
Directions
- Brown the ground beef in a medium skillet; drain off any fat.
- Stir in the taco seasoning and water called for on the package, and cook according to package directions.
- Cover 4 serving plates with a layer of tortilla chips.
- Spoon the ground beef mixture over the tortilla chips, dividing it evenly among the 4 plates.
- Top each portion with a generous handful of shredded cheese.
- Microwave, one plate at a time, for 1 to 2 minutes, just until the cheese is melted.
- Top with shredded lettuce and chopped tomato, place a dab of the jalapeno pepper slices on the side of each plate, and enjoy!
