Pork Chops and Sauerkraut Skillet

  • Ingredients

    • 6 pork chops
    • ½ medium onion, chopped
    • 3 medium potatoes, scrubbed and cut into chunks
    • 1 (32 ounce) jar of sauerkraut
    • 1 small apple, cored and diced
    • 2 tablespoons brown sugar
    • ½ teaspoon caraway seed
  • Directions

    1. Heat 2 tablespoons vegetable oil in a large skillet over medium-high heat; saut� onion until wilted, but not brown.
    2. Push onion to outer edges of skillet; add pork chops and brown evenly on both sides. Season chops with salt and pepper.
    3. Spread chunks of potato over pork chops; cover with sauerkraut; sprinkle evenly with brown sugar, caraway seed, and diced apple. Gently toss to mix in.
    4. Cover skillet, and simmer until pork chops and sauerkraut are tender, 1 to 1 ½ hours.
    • Yields: 6 servings
