Pork Chops and Sauerkraut Skillet
Ingredients
- 6 pork chops
- ½ medium onion, chopped
- 3 medium potatoes, scrubbed and cut into chunks
- 1 (32 ounce) jar of sauerkraut
- 1 small apple, cored and diced
- 2 tablespoons brown sugar
- ½ teaspoon caraway seed
Directions
- Heat 2 tablespoons vegetable oil in a large skillet over medium-high heat; saut� onion until wilted, but not brown.
- Push onion to outer edges of skillet; add pork chops and brown evenly on both sides. Season chops with salt and pepper.
- Spread chunks of potato over pork chops; cover with sauerkraut; sprinkle evenly with brown sugar, caraway seed, and diced apple. Gently toss to mix in.
- Cover skillet, and simmer until pork chops and sauerkraut are tender, 1 to 1 ½ hours.
