Herb Grilled Turkey Cutlets with Seasoned Bulgur
Ingredients
- 1 lemon
- 1 large tomato, chopped
- 1 cup bulgur
- ¼ cup loosely packed fresh parsley leaves, chopped
- 1 tablespoon chopped fresh oregano leaves
- 1 tablespoon chopped fresh mint leaves
- 2 teaspoons olive oil
- 1 pound turkey breast cutlets
Directions
- Prepare outdoor grill for direct grilling on medium.
- From lemon, grate ¼ teaspoon peel, and squeeze 2 tablespoons juice. In a small bowl, stir 1 tablespoon lemon juice into chopped tomato; set aside.
- In a 3-quart saucepan, over high heat, bring 2 cups water to a boil. Stir in bulgur, reduce heat to low, cover and simmer for about 15 minutes or until all liquid has been absorbed.
- Stir in parsley, ⅛ teaspoon salt, ⅛ teaspoon freshly ground pepper, lemon peel and remaining lemon juice.
- While bulgur cooks, prepare the turkey cutlets. In a small bowl, combine oregano, mint, and oil.
- Pat cutlets dry, rub with herb mixture on both sides, and sprinkle both sides with ¼ teaspoon salt and ¼ teaspoon freshly ground pepper.
- Grill cutlets 3 to 4 minutes or until no longer pink throughout, turning once.
- Divide bulgur and turkey among 4 serving plates, top turkey with chopped tomato mixture; garnish with additional mint leave, if desired and serve.
Note: Turkey can be prepared in a grill pan rather than on an outdoor grill, if desired.
