Grilled Bruschetta Chicken

Ingredients
- 4 small boneless skinless chicken breast halves (about 1-pound)
- 1/4 cup sun dried tomato vinaigrette salad dressing, divided
- 1 tomato, finely chopped
- 1/2 cup shredded low-moisture part-skim mozzarella cheese
- 1/4 cup chopped fresh basil

Directions
- Place chicken in large re-sealable plastic bag. Add 2 tablespoons dressing; seal bag. Turn bag over several times to evenly coat chicken with dressing. Refrigerate 10 minutes.
- Heat grill to medium heat. Cover half the grill with a sheet of heavy-duty foil.
- Remove chicken from bag; discard bag and dressing.
- Place chicken on uncovered side of grill grate; close lid and grill 6 minutes. Meanwhile, combine remaining dressing with tomatoes, cheese and basil.
- Turn chicken over; place on foil. Top with tomato mixture, dividing evenly among all four breasts.
- Close lid and grill 8 minutes, or until chicken is done (165 degrees, as measured with instant read thermometer.)
