Grilled Bruschetta Chicken

Grilled Bruschetta Chicken
  • Ingredients

    • 4 small boneless skinless chicken breast halves (about 1-pound)
    • 1/4 cup sun dried tomato vinaigrette salad dressing, divided
    • 1 tomato, finely chopped
    • 1/2 cup shredded low-moisture part-skim mozzarella cheese
    • 1/4 cup chopped fresh basil
  • Directions

    1. Place chicken in large re-sealable plastic bag. Add 2 tablespoons dressing; seal bag. Turn bag over several times to evenly coat chicken with dressing. Refrigerate 10 minutes.
    2. Heat grill to medium heat. Cover half the grill with a sheet of heavy-duty foil.
    3. Remove chicken from bag; discard bag and dressing.
    4. Place chicken on uncovered side of grill grate; close lid and grill 6 minutes. Meanwhile, combine remaining dressing with tomatoes, cheese and basil.
    5. Turn chicken over; place on foil. Top with tomato mixture, dividing evenly among all four breasts.
    6. Close lid and grill 8 minutes, or until chicken is done (165 degrees, as measured with instant read thermometer.)
