Zucchini Bread (Traditional Recipe)

  • Ingredients

    • 1 1/2 cups all-purpose flour
    • 1 teaspoon ground cinnamon
    • 1/2 teaspoon baking soda
    • 1/4 teaspoon baking powder
    • 1/4 teaspoon salt
    • 1/4 teaspoon ground nutmeg
    • 1 cup sugar
    • 1 cup finely shredded, unpeeled zucchini
    • 1/4 cup vegetable oil
    • 1 egg
    • 1/4 teaspoon finely shredded lemon peel
    • 1/2 cup chopped walnuts or pecans
  • Directions

    1. Preheat oven to 350 degrees. Grease bottom and 1/2 -inch up the sides of an 8x4x2-inch loaf pan; set aside.
    2. In a medium bowl, combine flour, cinnamon, baking soda, baking powder, salt and nutmeg until completely blended.
    3. In another medium bowl, combine sugar, shredded zucchini, vegetable oil, egg, and lemon peel; mix well.
    4. Add dry ingredients to zucchini mixture and stir just until moistened (batter should be lumpy).
    5. Fold in walnuts or pecans.
    6. Spoon batter into prepared pan.
    7. Bake for 55 to 60 minutes or until wooden pick inserted near the center comes out clean.
    8. Cool in the pan on a wire rack for 10 minutes. Remove from pan and cool completely on wire rack. Wrap tightly in plastic wrap or foil and store overnight at room temperature before slicing.
    • Yields: 1 loaf
