Chocolate Cream Cheese Truffles

Chocolate Cream Cheese Truffles get my vote for most deceptive candy. These smooth, sinful truffles so indulgent, it seems ludicrous that they are made with only four ingredients. I make sure to always have the components on hand so that I can whip up a batch of these whenever I need a last-minute dessert.

Cream Cheese Mints

Cream cheese, when taken on its own, can sometimes seem too rich. I love this recipe for Cream Cheese Mints because the cream cheese taste shines through, but is tempered by the fresh flavor of peppermint extract. If you have candy molds, you can actually mold these instead of hand-forming them. I think green cream cheese mint shamrocks for St. Patrick's Day, or pastel cream cheese mint flowers for Easter, would be adorable, not to mention tasty.

Oreo Truffles

Cookies are already a dessert by themselves, but by combining them with cream cheese, they can be transformed into two different easy, elegant candies. Oreo Truffles are made with cookie crumbs and cream cheese and are dipped in chocolate and decorated with slivers of Oreo cookies. Nutter Butter Truffles feature peanut butter cookie crumbs and a mixture of cream cheese and peanut butter. They have that irresistible cream cheese tang, but also a decent hit of peanut butter flavor, all encased in a dark chocolate shell.

Lemon Cheesecake Truffles

Tuesday January 13, 2009
While I like cheesecake, I don't usually order it at restaurants because I'm invariably served a boulder-sized slab of cake. If I had common sense this would be fine, but I usually end up eating most or all of the huge cheesecake wedge, then regretting it afterwards and blaming my stomachache on the innocent cheesecake. To circumvent this problem, I've come up with the perfect solution: bite-sized Lemon Cheesecake Truffles. These soft candies feature cream cheese and three types of lemon flavor, all rolled in crushed graham cracker crumbs. They taste exactly like lemon cheesecake, so I get to enjoy all of the creamy, tangy flavor of cheesecake without the guilt of having devoured a piece of cake the size of my head. Everybody wins!
