by FSIS to assist small and very small establishments.
FSIS Compliance Guidelines for E. coli
0157:H7 Verification (WMV)
This seminar reviewed the sampling and testing requirements
for E. coli O157:H7 in beef operations, how to
dispose of product that tests positive for E. coli
O157:H7, the use of instructional or disclaimer statements
on product packaging, and how to validate CCPs related to
E. Coli O157:H7 in ground beef operations.
Summary of Listeria monocytogenes Compliance
Guidelines for Small and Very Small Meat and Poultry Plants
that Produce RTE Products (WMV)
This seminar discussed the public health significance of
Listeria monocytogenes (Lm) contamination of ready-to-eat
products, identified environmental sources of Lm within
the plant environment, provided an overview of the FSIS
guidelines for controlling Lm in small and very small plants,
and discussed appropriate sampling for Listeria spp. and
indicator organisms consistent with the FSIS compliance
guidelines.

This seminar provided an overview of the avian influenza
virus and how it is transmitted.
Industry Preparation for a Human Pandemic
(WMV)
This seminar discusses what a pandemic influenza is and
how it spreads, the scope of the 2009 H1N1 pandemic, what
