Vanilla crepes with creamy yogurt filling and fresh berries

Ingredients

Whole wheat vanilla crepes:

  • ½ cup of white flour
  • ½ cup of whole wheat flour
  • 1 egg
  • 2 egg whites
  • ¼ tsp of salt
  • ½ cup of skim or 1% milk
  • 2 tbsp butter/margarine
  • 2 tbsp sugar
  • 1 tbsp vanilla
  • Non-stick cooking spray
  • Optional: Powdered sugar

Filling:

  • 16 oz container of non-fat vanilla flavored Greek yogurt(this can be found in the organic section)

Topping:

  • 1 ½ cups of slices strawberries
  • 1 ½ cups of raspberries
  • 3 tsp lemon juice
  • 3 tsp sugar
  • Optional: top with fat free reddi whip or cool whip
Directions:

Step One: Combine white flour, whole wheat flour, sugar and salt in a medium sized mixing bowl and stir until well blended.

Step Two: Add the egg, egg whites, milk, margarine, and vanilla extract, beat with electric mixer until consistency is smooth. Step Three: Coat a frying pan with non-stick spray and place over low- medium heat(3 or 4). Pour crepe batter in the frying pan until it is the size of a small flour tortilla. The crepe is done once it appears matte and no longer looks like there is liquid on top. You can even use a spatula and check the other side to see if it is golden brown. Then transfer the crepe to a plate. Repeat the process until the batter is gone. The amount of batter you have will create 6 crepes this size. Optional: lightly sprinkle crepes with powdered sugar Step Four: Place 5 tbsp of the vanilla greek yogurt in a row in the center of the crepe and fold sides over the yogurt. Then flip it over so the folded edge is face down. Step Five: Mix the strawberries, raspberries, lemon juice and sugar. Then cover crepes with berries. Optional: Top with fat free/ low fat whipped cream or cool whip

Healthy:
This recipe is healthy because it is high in fiber and also has calcium, protein and probiotics from the yogurt. It is also low in fat and calories.
Story:
I really enjoy creating recipes and cooking. I had never realized how much fun it was until I spent a summer with my Aunt Nancy who loves to cook. We would make all kinds of recipes that we saw on the food network. I remember her telling me that people who like to get their hands dirty and play with things like cooking. It’s a lot of fun to mix and match various ingredients until you create a delicious and unique recipe.
