Healthy Spicy Meatloaf

Ingredients
  • 2 pounds 80% lean ground beef
  • 2 blocks of fresh firm tofu (use tofu in the refrigerated section of your store- recommend House brand tofu)
  • 1/2 cup bread crumbs
  • 1 large beaten egg
  • 1/4 cup BBQ sauce (recommend KC Masterpiece)
  • 1 cup Guinness Extra Stout (cook gets the remaining Guinness!)
  • 1/2 large onion diced (recommend red onion)
  • 1 table spoon of fresh diced garlic clove (or more to taste) or garlic powder
  • 1 large bell pepper diced. Optional- add finely diced cayenne peppers, serrano peppers, and/or jalapeno peppers.
  • For real zing, add a finely diced habanero pepper. I generally add a medley of peppers including bell pepper, habanero peppers, and cayenne peppers because my family likes it spicy!
  • 1 tablespoon (or to taste) Zatarain's Cajun Seasoning
Directions:

Thoroughly mix by hand all of the ingredients in a large mixing bowl and place in a bread pan.

Preheat oven to 375

Bake (oven 375) or gas BBQ grill on medium (recommended method) for approx. 1 hour 30 minutes or until the internal temperature reaches a consistent 160 degrees. If the top has not fully browned, increase temperature to broil for 5 minutes to brown. After removing the meatloaf from the oven, wait 5 minutes to serve. The internal temperature will generally increase another five degrees.

The finished meatloaf will be super-moist, so use caution serving.

Low fat and partially substitutes tofu for ground beef
Story:
I developed this recipe to reduce red meat and increase veggies in my diet. Essentially, this recipe makes a 50/50 meat/tofu meatloaf. Tofu is very healthy, counts as a veggie, has some protein, and absorbs the flavor of what it is mixed with. The same meat/tofu/veggie recipe can be used for healthy hamburgers.
