FSIS collects samples of meat
and poultry products to estimate the national prevalence and levels
of bacteria of public health concern. Each report is a compilation
of data obtained for a particular species or type of animal.
Draft Baseline Study Plans
Beginning with the Young Chicken Baseline Study in 2006, FSIS will
make draft study plans available for review before the official baseline
sample collection begins. If concerns are raised, FSIS will assess
those concerns before moving forward with the study.
