Brandan Kelley, who left his position as wine director at Charlie Palmer at The Joule, is helping Neighborhood Services chef-owner Nick Badovinus open Neighborhood Services Tavern on North Henderson Avenue next to Capitol Pub (the former Soley space). Target date for opening is early March. "I'll be doing a little bit of everything - service, beverage, etc.," says Kelley. That's not unlike what he was doing at York Street before chef-owner Sharon Hage gave him more wine and beverage responsibilities. Two years ago, he joined Charlie Palmer's wine staff. He says the menu at the tavern will be similar to the Neighborhood Services original, but a little scaled down, with options such as more sandwiches. He'll also oversee the beverage program at both spots - and, coming soon, a third location.

The family that started the Hoffbrau Steaks restaurants in 1978 in Dallas began hand-cutting their own in 1989 and supplying other restaurants in 1991. Now they have "opened" HB Butcher Shop online so anyone can order. We got the tip from Thrillist. These are wet-aged USDA prime and select cuts, and the prices are not stratospheric like, say, Allen Brothers. They vacuum-seal and freeze the meat before shipping it to you. The site is at www.hbbutchershop.com. If you just want to eat the steaks, the Dallas Hoffbrau Steaks is in the West End.

Nancy Nichols reports on Side Dish that Soley, Jose and Norma Vasconcelos' French-Mexican fusion restaurant on Henderson Ave., has closed and that chef Jose and pastry chef Norma are moving back to Mexico. We're attempting to confirm. The phone has been disconnected, though the website still works. I'm trying to contact the Vasconcelos. If true, this is so sad -- that was a nice little place, and Vasconceloses are good cooks. Does anyone have any intelligence?

It's that time of the week again. This week, I've hogged the critiquing duties, with reviews of AMPM, the sparkly nightlife spot downtown in the Mosaic Building, and the two Carolina's. This part you've heard. Former Top Chef contestant and Abacus alum Tre Wilcox (top left) takes the top spot at Plano's Loft 610 Urban Restaurant & Lounge on 10/06. (Fun with numbers: 10/06, 610) What you haven't heard is that Loft 610 owner Brian Twomey (top right) is also backing Wilcox in the chef's first solo restaurant. The two have been scouting potential real estate in uptown, downtown and the Park Cities, but Twomey says to expect something "south of Northwest Highway" in 18 months or so. The vision is for a chef-driven fine dining spot, probably to be called "Tre." Twomey, a business and marketing whiz whose credits include work with Citigroup and Coca-Cola, says that he and Wilcox (both in their thirties) gelled creatively right away. For now though, Twomey says "our top priority is Loft 610."

Since Efisio and Lori Farris opened Arcodoro in Houston many moons ago, Efisio's brother, Francesco Farris, has manned the kitchen at Arcodoro & Pomodoro on Routh, which effectively collapsed two restaurants, Arcodoro and Pomodoro then on Cedar Springs, into one. Now word comes, as Arcodoro & Pomodoro go through another redux to the new Arcodoro in the old Bice space at the Crescent Court, that Francesco Farris will not have a role in the new restaurant. Lori Farris cites "company reasons." No word from Francesco, who is in the brothers' native Sardinia on vacation. Lori says the new Arcodoro space is coming right along, and she expects it to open next weekend.

The Flying Saucer Draught Emporium is coming to Lake Ray Hubbard later this month, which makes the sixth location in Texas. It's going in next to Bass Pro Shop in the former County Line Barbecue spot. Boaters will be able to tie up to a dock outside. And it will be the only Saucer to offer catfish and shrimp (not caught in this lake, to be sure). I ran out of room in the print version of this week's Screen Door review to properly address Sunday brunch, which is a worthwhile - if slightly pricy - aspect of the restaurant to experience. Though you can also order a la carte, brunch is set up as a $32 three-course prix fixe menu. (The restaurant's web site has a slightly out-of-date version of the menu here.) Supplemented with banana-nut muffins and corn bread muffins slathered with smoked apple butter, you can easily eat your way into the need for an afternoon nap.

One thing I'd love to hear from y'all about is places you think I missed on my hunt. Fried chicken is an enduring obsession to mine, and an online follow-up report of visits to places I missed this round seems probable if I get some good suggestions. Rudy's Chicken and Hall's Chicken Shack have already been brought to my attention ... On Monday, I'll dish a bit about some exceptional sides I ate alongside the many plates of browned bird, and also offer some thoughts on fried chicken from a more national perspective - including some quotes from John T. That's right: Bill ate fried chicken almost every day for a month. He explains: "Over the last month, I visited nearly 30 Dallas-Fort Worth area restaurants that serve fried chicken. The range of styles and settings in many ways reflects national trends and attitudes toward the browned bird. Chicken-fried steak will always be the king of battered proteins in Texas, but the diversity of local fried chicken reveals an enduring love for this dish, past and present. It also offers a taste of its multicultural future." From Seoul food to soul food, chicharron de pollo to "Grandma Minnie's fried chicken," he ate it all. Here it is: Bill's fried chicken roundup. In the coming days, he'll be here at Eats offering additional tasting notes, a roundup of favorite side dishes and other features. In the meantime, share your favorite fried chicken place.
