Description: |
An HTST Pasteurizer Operator is a person responsible for the legal pasteurization of milk or dairy products using "high temperature short time" (HTST) pasteurization equipment. This includes HHST and UHT pasteurization equipment. Pasteurization of milk and dairy products must be conducted under the direct supervision of a pasteurizer operator licensed for the type of equipment in use (HTST or Vat). |

Initial license fee: Food Safety Division License Fees Renewal: $50 biannual (every two years) fee for licenses issued after 10/29/91; no fee for anyone licensed prior to 10/29/91. |

Examination Information: |
Examination required for initial licensing only- Exam time: Weekdays, 8 am-5 pm
- Exam locations: At locations with district sanitarians, or at the Department of Agriculture, Food Safety Division, 635 Capitol NE, Salem, OR 97301-2532.
- Exam pass: 80 percent or higher.
- Exam repeat: No limit.
Examination of applicant Written examination shall include questions relating to (a) knowledge of laws and regulations relating to activity for which the license is desired (b) theory and practice involved in the performance of the licensed activity. Practical examination shall include demonstration of ability to (a) make required quality control tests (b) operate required equipment (c) manufacture, grade, test, or pasteurize milk and milk products, as the case may be (d) care, clean, and maintain equipment and utensils involved in the licensed activity. The practical portion of the exam is conducted at a dairy pasteurizing facility. |

Prerequisites: |
Qualifications(1) Applicants for dairy operator licenses shall be
(a) able to read and write legibly (b) at least 18 years of age (c) free of communicable diseases. (2) Applicants for a High Temperature Short Time (HTST) Pasteurizer Operator License shall be required to have at least two months practical experience helping operate pasteurization equipment. There is no waiting period for applicants for a vat pasteurizer license or sampler/grader license. |
