Welcome to the Food Safety and Environmental Services (FS&ES)
home page of the Office of
Environmental Health Services (OEH). The FS&ES is
responsible for general supervision over food safety and environmental sanitation
monitoring and enforcement in the State of Arizona in accordance
with Arizona Revised Statutes
and the Arizona
Administrative Code.
The mission of
the FS&ES is: To prevent and control human
illness related to the transmission of infectious agents or toxic
substances in food and water, and to prevent disease transmission
and injury due to unsafe conditions in hotels and motels, trailer
coach parks, bathing places, group homes, behavioral health
centers, adult foster care homes and children's camps.
FS&ES plans, organizes and directs a statewide
public health sanitation program including food,
institutional sanitation, children's camps, recreational
sanitation, consumer product safety, bedding, bottled water,
produce warehouses, and swimming pool maintenance. The program
also conducts epidemiological investigations, interprets
sanitation laws for local health departments and establishes and
maintains liaisons with federal agencies and local
health departments.
ADHS has implemented a Food Biosecurity Program to increase food
security awareness among food processors, retailers and health
inspectors. Food has been used as a vehicle to spread biological and
chemical agents and product tampering is a concern for all food
facility operators.
The Food Biosecurity
Program is a source of information on bioterrorism and preventive measure
for intentional contamination of foods. A guidance for food establishment operators "Securing the Safety of Arizona's Food Supply"
and a supporting
vulnerability assessment checklist has been developed by ADHS. A vulnerability
assessment will reveal the ability to respond to a threat. Upon an
operator's request, an ADHS or county food biosecurity specialist can
conduct a vulnerability assessment at the food establishment. The
information will remain strictly confidential.
Arizona Food Safety Regulations
The FS&ES also provides training, tests and certifies Arizona Registered
Sanitarians to assure a competent
environmental health workforce.
