Chile Tequila Chicken

Friday January 16, 2009
This Chile Tequila Chicken is on the spicy side, but it is very juicy and delicious! I used chile infused tequila to make it, but you can sub your regular favorite tequila and add some chopped chiles to the marinade to get the chile flavor and heat. The chicken is cooked on a hot comal right in your kitchen and will fill your whole house with a delicious aroma. Enjoy!

Gorditas

Monday January 12, 2009
These Gorditas are one of my favorite lunches. It is a thick and hearty flat bread made with masa harina that is cooked until it puffs up, which enables you to slice it open and fill it up. Fillings are usually meat in a thick sauce, or just shredded or cubed meat and a little salsa. You can get creative with your fillings by trying seafood versions or fruit versions. However you make your gordita, you will enjoy the chewy texture of this Mexican flatbread.

Beer Cocktail- Michelada

Monday January 5, 2009
In Mexico it has always been popular to enjoy a beer with a squeeze of lime and a dash of salt. For an even more unique twist on a beer cocktail, try this recipe for a Michelada which is recently gaining popularity outside of Mexico. There are many recipes, but the best ones stick close to the original ingredients which always include salt and lime juice, Maggi sauce, and Worchestshire sauce.
