Perhaps the greatest women's basketball player in Mean Green history, Mitchell was named all-conference all four years at North Texas, concluding her career as the 2002 Sun Belt Conference Player of the Year.

She finished as the Mean Green's all-time leading scorer with 1,764 points and ranks No. 1 in free throws and attempts. She also ranks in the top 10 in school history in 10 other categories. During her senior season, she was part of a team that set a school record with 21 wins in a single season and went to back-to-back postseason WNITs. During that year, Mitchell averaged 19.4 points a game and scored 20 points or more 14 times. She turned in one of the most dominating performances during the season with a career-high 37 points.

In her four-year career, Mitchell averaged double figures in each season and is the only women's basketball player in school history to win a Player of the Year award and the only four-time all-conference player in women's basketball at North Texas. Mitchell had her number retired during the 2001-02 season.

After her collegiate playing career, Mitchell had two stints as an assistant coach at UNT and was an assistant under Karen Aston at Texas. In 2015, Mitchell became the Mean Green's eighth head coach and took what she described as her "dream job."
