Regarding the plate method, I worked with a diabetes educator in Seattle a
few years ago who developed a really neat placemat that had visuals with a
plate, suggested portions, and a list of suggested foods to eat. She had it
laminated, and she also created a version in Spanish. If anyone is
interested, I can try to find her contact information. At the time, she was
creating a website with ordering information.
