Technical Abstract: Mannitol, a naturally occurring polyol, can be produced by lactic acid bacteria (LAB) by fermentation. Some homofermentative LAB produce small amounts of mannitol from glucose. Several heterofermentative LAB can produce mannitol effectively from fructose. In this article, a review on mannitol production by both homofermentative and heterofermentative LAB is presented.
