Technical Abstract: Cyclodextrins have seen increased use as components in analytical methods to detect and quantitate a broad range of low molecular weight molecules. Improved detection is frequently associated with inclusion complex formation, and, in some cases, modulation of spectroscopic properties. These cyclic oligosaccharides can influence the detection of several important mycotoxins, including aflatoxins, ochratoxin A, zearalenone, and through chemical derivatization, T-2 toxin. Studies of the effect of cyclodextrin derivatives on the fluorescence spectroscopy of zearalenone reveal a complex relationship between the spectroscopic properties and cyclodextrin structure. Structure-activity relationships are influenced by several factors, including solvent, pH, and other competing quenching and enhancing phenomenon. Models of the inclusion complex of mycotoxins with cyclodextrins provide insights into the usefulness and limitations that may be expected when cyclodextrins are incorporated into mycotoxin analytical methods.
