Technical Abstract: During the past 50 years, U.S. consumption of oil and fat has continued to increase. It also shows a move away from animal fats to vegetable oils. Soybean oil became the most produced and utilized vegetable oil. Currently, genetically produced oils dominate the U.S. oil industry. There is a tremendous R & D effort to find new uses and value-added products from the huge annual surplus of soybean oil. In the future, U.S as well as the world fat and oil industry will focus on the quality rather than the quantity. With more knowledge known on health and medical effects of fats and oils on the human body, more healthy oils will be introduced. These healthy oils can be produced by new biotechnology and bioprocessing.
