Figure D4-1. IOM Figure 8-2: Relationship Between Serum Total Cholesterol Concentrations and Saturated Fatty Acid Intake

This graph shows the univariate multilevel regression slope of blood total cholesterol versus dietary saturated fat intake using data from 395 metabolic ward experiments. The saturated fat intake varied from approximately 3 to 34 percent of energy. Dietary intakes of saturated fat were associated with increases in total blood cholesterol along a linear trend.
