Research Project: Characterization of Principal Flavor Components in the Cerasus Subgenus Members of the Prunus Germplasm Collection

Objective:
Evaluation of sweet cherry flavor-related primary and secondary metabolites to reveal links between fruit flavor and quality. Metabolic profiles will be generated from available accessions in the Davis National Clonal Germplasm Repository to improve decision-making regarding parental choices and developing novel flavors in future cherry cultivars. All measurements will be provided to the Prunus curator for entry into the GRIN system.

Approach:
Novel GC-MS based metabolic profiling techniques will be employed to evaluate multiple flavor-affecting pathways. Data from comprehensive evaluation of metabolites of multiple accessions incorporated with physical fruit characteristic description will be analyzed to reveal links between the metabolic fingerprint and fruit flavor and quality.
