Research Project: ANTI-INFLAMMATORY EFFECTS OF STRAWBERRIES IN OVERWEIGHT/OBESE INDIVIDUALS Project Number: 5306-51530-013-04

Objective:
To evaluate the anti-inflammatory effects of dietary strawberries in obese individuals.

Approach:
Obese human volunteers will be fed diets containing strawberries or control diets. Inflammatory markers will be measured by repeated blood draws during the study period. Immune cell responsiveness will be tested on immune cells isolated from the subjects. Complete lipid profiles will be analyzed to determine changes due to consumption of strawberries compared to the control diet without strawberries.
