There is a great new ESOL curriculum on worker health and safety
available from Mass. Worker Education Roundtable at
www.umass.edu/roundtable/projects/Health-Safety-ESOO.pdf. You can
download it there. It was written by Jenny Utech, an experienced ESOL
teacher and trainer. You can also contact Connie Nelson, the Director
of Roundtable, at (617) 983-3667.

Also, materials and curricula for ESOL students on various specific
health and safety topics are available from many of the COSH (Coalition
for Occupational Safety and Health Organizations) which exist in many
states. In our, it's MassCOSH at www.masscosh.org. On that site, there
is a list of COSH's in other states with contact information and links
to their sites, which include materials on many health and safety topics
(at www.masscosh.org/node/108 ). COSH materials are typically written
in popular format and often more accessible to ESOL or low-literacy
folks than many (but not all) Federal DOL publications. Along with info
about specific health and safety hazards, they are focused on helping
workers know their rights, and on advocacy and legislation.

I don't know if any of these are actually interactive on-line, but they
could certainly be adapted so that they were.
