Research Microbiologist


MAJOR DUTIES:

As a Research Microbiologist, the scientist will conduct research on a project entitled “Control of Pathogenic and Spoilage Bacteria on Red Meat.”  The incumbent is expected to function in a team of scientists with traditional and molecular microbiology, biochemistry, biology, food technology, and meat science backgrounds that are conducting a research program targeted at improving the safety of red meat from live animals to consumption.  The incumbent will provide scientific leadership and expertise toward the elimination of E. coli O157:H7 and other foodborne pathogens using some combination of the following areas: epidemiology, developing new methods for detecting foodborne pathogens, identifying emerging issues in food safety, analyzing and interpreting trends in bacterial pathogen prevalence and virulence, gene transfer, serovar diversity, microbial ecology, source tracking for red meat products, developing phylogenetic and phenotypic markers for E. coli and Salmonella based on genomic and proteomic strain comparisons, expression analysis, multi-drug resistance profiles for use in molecular strain typing, intervention method development, identifying sources of spoilage and pathogenic bacteria, and analyzing the dynamics of pathogen transmission among the sources.  Successful completion of the research will provide the livestock and meat processing industries with information and technologies to reduce the risk of foodborne illness from meat products.
