Potato Pancakes
M, E, W, P, N

1 cup cooked potatoes, mashed
1 cup uncooked potatoes, finely grated
1/2 tsp. salt
1/2 tsp. baking powder
2 T. milk-free margarine

In large bowl, combine all ingredients except margarine. Set aside. In large skillet, melt margarine over medium heat. Spoon potato mixture into skillet, forming pancakes; cook until golden brown on bottom; flip and continue cooking. Serve plain or with maple syrup.

Reindeer Cookies
M, E, P, N

1 cup milk-free margarine, softened
3/4 cup confectioners sugar
1 1/2 tsp. vanilla extract
2 cups flour
1 T. ground cinnamon
1 1/2 T. sugar
decorator icing (optional)

Preheat oven to 325 degrees. In medium bowl, beat margarine with electric mixer on medium until creamy. Add confectioners sugar; beat until smooth. Add vanilla extract; beat well. Set aside. In large bowl, stir together flour and cinnamon. Gradually add margarine mixture; beat until well blended. Divide dough in half. Roll each half to 1/4-inch thickness. Sprinkle with sugar. Cut dough with reindeer-shaped cookie cutters. Place 1 inch apart on ungreased cookie sheet. Bake 18 minutes. Cool on cookie sheets 2 minutes, then transfer to wire racks to cool completely.

Suggestion: Frost cookies and use safe red candy to give the reindeer red noses!
