The essays show the range of activities in the field, from dietetics to parenting, teaching and cooperative extension work, to test kitchen and product development. Explores the ways gender, race, and class influenced women's options in colleges and universities, hospitals, business, industry, and government, and the strategies women used to overcome obstacles to gain legitimacy.
