Chayote Squash
(Vegetable Pear)
Preparation Select those with tender skins. Wash, remove stem and blossom end. Do not pare. Dice, removing seed. Water blanch 2 minutes.
Cool, drain and package, leaving 1/2-inch headspace. Seal and freeze.
