"Green Markets" for Farm Products (Summary)

A growing number of farmers and ranchers are seeking to capture more of the food consumer's dollar by closing the gap between their farm and the consumer. Producers are doing this by differentiating or adding value to the food they raise. This publication summarizes what some interesting research is telling us about food consumers' views of the environment and the food they eat, and lists resources for growers who are starting to think about how they might capture a share of the "green" market.
