Evaluation
of Nutrition Education with Low-Income Families

During the late 1990s, ERS worked in conjunction with the Food and Nutrition
Service (FNS) to support development of methodology and validation of
instruments for evaluation of nutrition education in the Food Stamp Program.
This collaboration resulted in the publication of a series of White Papers
in the Journal of Nutrition Education in 2001. The White Papers
cover assessments of five key nutrition education issues, including the
social-ecological model for evaluating nutrition education, food shopping
practices, food safety education, dietary quality tools, and food insecurity/security.
The papers summarize the current state of research and evaluation in each
of the issues, and, through publication in the Journal of Nutrition
Education, reach out to a broader audience of researchers, policymakers
and program directors. Articles are in Adobe Acrobat PDF format and reprinted
with permission of BC Decker Inc, Publisher, Journal of Nutrition Education,
