    USDA National Nutrient Database for Standard Reference, Release 21 Nutrient Lists -Reports by Single Nutrients
    USDA. ARS. Nutrient Data Laboratory.
    Reports of selected food items and nutrients, sorted either by food description or in descending order by nutrient content in terms of common household measures. Single nutrients include protein, fat, energy (calories) carbohydrate, fiber, sugar, calcium, iron, magnesium, phosphorus, potassium, sodium, zinc, copper, manganese, selenium, vitamin A, vitamin E, vitamin K, vitamin C, thiamin, riboflavin, niacin, pantothenic acid, vitamin B6, vitamin B12, folate, cholesterol, fatty acids and various phytonutrients and antioxidants.

    Nutritive Value of Foods, Home and Garden Bulletin No. 72 (HG-72)
    USDA. ARS. Nutrient Data Laboratory.
    Contains data on over 1,274 foods expressed in terms of common household units. The 19 nutrients in the table are water; calories; protein; total fat; saturated, monounsaturated, and polyunsaturated fatty acids; cholesterol; total dietary fiber; calcium; iron; potassium; sodium; vitamin A; thiamin; riboflavin; niacin; and ascorbic acid. This edition was developed using data from Release 13 of the USDA National Nutrient Database for Standard Reference.

    USDA Table of Nutrient Retention Factors - Release 6 (2007)

    Contains the factors for calculating retention of 26 vitamins, minerals and alcohol during food preparation, including components folic acid, food folate, beta carotene, alpha carotene, beta cryptoxanthin, lycopene, lutein/zeaxanthin, and choline.

    USDA Database for the Oxygen Radical Absorbance Capacity (ORAC) of Selected Foods
    USDA. ARS. Nutrient Data Laboratory.
    This database contains measures of the antioxidant capacities of 277 food items. Many of the fruits, nuts, vegetables and spices listed were analyzed for their Oxygen Radical Absorbance Capacity, known as ORAC. ORAC is one of a number of methods available to evaluate the antioxidant capacities of foods.

    USDA Database for the Added Sugars Content of Selected Foods, Release 1
    USDA. ARS. Nutrient Data Laboratory.
    Data reported are added sugars, total sugars and carbohydrates in 2,041 common foods and are estimated values based on the added sweeteners listed under "ingredients" on the package labels of processed foods and beverages.
