Agricultural work ranks among the most dangerous jobs in America. The high incidence of injury and fatality on the farm and in the slaughterhouse has been brought to light in famous books such as Upton Sinclair’s The Jungle and Eric Schlosser’s Fast Food Nation. But, other risks – such as exposure to toxic chemicals, influenza and antibiotic-resistant bacteria – have received less attention.
