The plant is an herbaceous perennial, with erect, branched stems, up to 2 feet in height. The small leaves are lanceolate and entire. The green leaves and succulent stems may be used fresh or dried for flavoring salads, vinegar, pickles, meats, etc. Tarragon oil is obtained by distillation of the green parts, while tarragon vinegar is an infusion of the green parts in vinegar. In the U.S., 4 acres were reported in the 1954 census.
