    Cruise Ship's Corrective Action Statement

Item No.: 16
Site: Pantry-Coffee Bar
Violation: There were 6 glasses containing sliced fruit (including melons) in the refrigerated display case. These were on a time as public health control plan. The glasses of fruit were said to have been brought up from the main galley and placed in the unit at 1000 and were to be discarded at 1300. The refrigeration unit ambient air temperature was at 40°F. The fruit was measured at 57°F. Staff stated that the fruit glasses are prepared in the galley and held in the walk-in refrigeration unit until retrieved by the bar staff. It was not clear how the product could have reached that temperature if placed in the unit at a maximum temperature of 41°F 3 hours earlier. Time control must start when the food is first removed from temperature control.
Recommendation: Except during preparation, cooking, or cooling, or when time is used as the public health control, ensure that potentially hazardous food is maintained: (1) At 60°C (140°F) [roasts 54°C (130°F)] or above, or (2) At 5°C (41°F) or less. Ensure that food is at 41°F or less when placed in time control.

Violation: Two containers of ice cream were partially open, exposing the contents to potential contamination. This was corrected.
Recommendation: Ensure items are covered.

Violation: The far right bulk milk container dispensing tube was protruding greater than 1 inch from the chilled dispensing head.
Recommendation: Ensure that the bulk milk container dispensing tube is cut on the diagonal leaving no more than 25mm (1 inch) protruding from the chilled dispensing head.

Violation: One backsplash light cover was cracked creating a rough surface.

Violation: The sanitizer bucket chlorine concentration was measured at 10 ppm. Staff stated the bucket had been prepared 3 hours earlier. The bucket was immediately emptied and a new sanitizer batch prepared.
Recommendation: Ensure that a chlorine solution used as a sanitizing solution has a concentration between 50 mg/L (ppm) and 200 mg/L (ppm).
