    Cruise Ship's Corrective Action Statement

Item No.: 08
Site: Potable Water-
Violation: The potable water connections in the pump rooms of the swimming pools and whirlpools were not listed in the cross-connection control program.
Recommendation: Ensure that all of the potable water connections in these rooms are listed.

Site: Potable Water-
Violation: Two of the potable water connections in the garbage room were not listed in the cross-connection control program. The hose connection near the entrance did not have a backflow prevention device.
Recommendation: Ensure that all of the potable water connections are listed. Install a backflow prevention device for the hose connection near the entrance.

Violation: The vent for the left backflow prevention device had a plugged vent hole.
Recommendation: Remove the plug from the vent.

Site: Swimming Pool-Main Pool
Violation: The floatation device rope was tangled around the pole, making it difficult to remove for use.
Recommendation: Ensure that an easy-access shepherd's hook and approved floatation device (with a length of line 1/2 the pool width or 16 m (50 feet)) is provided at a prominent location near each public swimming pool.

Violation: The vessel was waiting 24 hours to conduct verbal interviews with cabin mates of crew ill with gastrointestinal illness. It appeared that the date and time entries for the asymptomatic cabin mates were from the information entry only and not the actual initial interviews. This was confirmed with the nurse. During the 08/24/28/08 cruise an asymptomatic cabin mate was not followed up for 48 hours after the onset of the ill crew members symptoms.
Recommendation: Ensure that cabin mates are interviewed on the day the ill crew member presents to medical.

Site: Provisions-Frozen Bread Freezer and Dairy Room
Violation: Condensate from the deckhead was dripping onto sealed boxes of packaged bread and packaged cheese.
Recommendation: Ensure that condensate is not allowed to drip on to food packages.

Site: Preparation Room-Potato
Violation: The washers on a few of the fasteners inside the potato peeler were corroding.
Recommendation: Ensure that materials used in the construction of multiuse utensils and food-contact surfaces of equipment are: (1) Durable, corrosion-resistant, and nonabsorbent; (2) Sufficient in weight and thickness to withstand repeated warewashing; (3) Finished to have a smooth, easily cleanable surface; and (4) Resistant to pitting, chipping, crazing, scratching, scoring, distortion, and decomposition.

Site: Food Service General-Hot Plate Units
Violation: The drip pan housings were deep, wide, and less than 2 inches in height. There were also seams along the length of the housings. These seams and limited access made the housings difficult to clean. According to staff, these units will be replaced in the next dry dock.
Recommendation: Ensure that nonfood-contact surfaces are free of unnecessary ledges, projections, and crevices, and designed and constructed to allow easy cleaning and to facilitate maintenance.

Violation: There was excessive sealant on the exterior of the Alto-sham units. Some of this sealant was loose and peeling.
Recommendation: Ensure that nonfood-contact surfaces are free of unnecessary ledges, projections, and crevices, and designed and constructed to allow easy cleaning and to facilitate maintenance.

Site: Food Service General-Hot Plate Units
Violation: The drip pan housings for the hot plate units in the main, crew, and lido galleys were soiled.
Recommendation: Ensure that nonfood-contact surfaces of equipment are kept free of an accumulation of dust, dirt, food residue, and other debris.

Site: Preparation Room-Buffet
Violation: There was liquid dripping from the deckhead to the preparation counter below. Staff stated that the drip began the previous morning and the counter would not be used until the leak was repaired.
Recommendation: Ensure that the leak is repaired and the counter is washed, rinsed and santized prior to use.

Site: Preparation Room-Meat
Violation: There was no water at the handwash sink. The valves had been shut off. This was corrected.
Recommendation: Ensure that handwashing sinks are equipped to provide water at a temperature of at least 43°C (110°F) through a mixing valve or combination faucet. For handwash sinks with electronic sensors, where the user cannot make temperature adjustments, ensure that the temperature provided to the user does not exceed 52°C (125°F).

Site: Galley-Ecstasy and Fantasy Main Course Lines and Central Galley
Violation: There was missing and recessed grout in these areas.
Recommendation: Ensure that decks, bulkheads, and deckheads in food preparation, warewashing, pantries, and storage areas are constructed and maintained for easy cleaning.

Recommendation: Ensure that ventilation hood systems and devices are sufficient in number and capacity to prevent grease or condensation from collecting on bulkheads and deckheads.

Site: Housekeeping-Deck 9 Public Toilet Room
Violation: There was no way to exit the handicap accessible stall without touching the door handle with bare hands. This stall was equipped with a handwash sink.
Recommendation: Equip public toilet facilities so that persons exiting the toilet room are not required to handle the door with bare hands. This may be accomplished by methods such as locating paper towel dispensers at sinks and waste containers near the room door, installing mechanically operated doors, door removal, or other effective means.
