    Cruise Ship's Corrective Action Statement

Item No.: 08
Site: Potable Water-
Violation: The two reduced pressure assemblies for the sprinkler system and the four reduced pressure assemblies for the international shore connections on the mooring deck were tested, but the pressure differentials on both sides of the valves were not recorded.
Recommendation: Ensure that backflow prevention devices requiring testing, for example reduced pressure backflow preventer and double check valves with test cocks, are inspected and tested with a test kit at least annually and that the test results showing the pressure differences on both sides of the valves are maintained for each device.

Site: Potable Water-Comprehensive Cross-Connection Control Program
Violation: The connection to the potable water system for the thermal suite showers was not listed in the comprehensive cross-connection control program. The connection was protected by an appropriate backflow prevention device.
Recommendation: Ensure that the cross-connection control program includes at minimum: a complete listing of cross-connections and the backflow prevention method/device for each, so that there is a match to the plumbing system component and location, and an inspection frequency. Ensure that air-gaps are included in the listing.

Site: Potable Water-Comprehensive Cross-Connection Control Program
Violation: The connections between the brass fittings and the mixing tanks for the carbonators were not listed in the comprehensive cross-connection control program. These connections were protected with the appropriate backflow prevention devices.
Recommendation: Ensure that the cross-connection control program includes at minimum: a complete listing of cross-connections and the backflow prevention method/device for each, so that there is a match to the plumbing system component and location, and an inspection frequency. Site: Buffet-Officer's Mess
Violation: There was no side shield on the hot buffet line next to the juice machine.
Recommendation: Ensure that food on display is protected from contamination by the use of packaging; counter, service line, or salad bar food guards; display cases; or other effective means.

Site: Buffet-Starboard Buffet
Violation: The coating on the ceramic trays for the breads was peeling.
Recommendation: Ensure that materials used in the construction of multiuse utensils and food-contact surfaces of equipment are: (1) Durable, corrosion-resistant, and nonabsorbent; (2) Sufficient in weight and thickness to withstand repeated warewashing; (3) Finished to have a smooth, easily cleanable surface; and (4) Resistant to pitting, chipping, crazing, scratching, scoring, distortion, and decomposition.

Site: Preparation Room-
Violation: There were slotted fasteners in the food contact surfaces of the potato peeler.
Recommendation: Replace the slotted fasteners with smooth, low profile and non-corroding fasteners.

Violation: The service side of the bar counter edging was chipped and peeling.
Recommendation: Ensure that nonfood-contact surfaces of equipment and utensils are designed and constructed to be durable and to retain their characteristic qualities under normal use conditions.

Violation: There were holes in the technical compartments.
Recommendation: Close the holes.

Violation: There was loose sealant along the oven and bulkhead juncture. This was corrected.
Recommendation: Ensure that nonfood-contact surfaces of equipment and utensils are designed and constructed to be durable and to retain their characteristic qualities under normal use conditions.

Violation: The plastic end piece on the dough conveyor was cracked.

Violation: The water nozzles on the juice machines were soiled.
Recommendation: Ensure that food only contacts surfaces of equipment and utensils that are cleaned and sanitized.

Violation: The plastic tubes for the electrical wires were heavily soiled inside the technical compartments.
Recommendation: Ensure that nonfood-contact surfaces of equipment are kept free of an accumulation of dust, dirt, food residue, and other debris.

Site: Food Service General-Ice Machines
Violation: Per the staff, the inside of the ice machines were cleaned with a cleaning chemical and not sanitized. However, the instructions posted on the inside cover of the ice machine stated that the ice machine needed to be cleaned and sanitized.
Recommendation: Ensure that manufacturer's instructions for cleaning and sanitizing the ice machines are followed.

Site: Food Service General-Decks
Violation: The poured deck material was cracked and peeling especially along the scuppers in the food preparation areas. This was in the process of being corrected.
Recommendation: Ensure that decks, bulkheads, and deckheads in food preparation, warewashing, pantries, and storage areas are constructed and maintained for easy cleaning.

Violation: There was soft sealant along the deck/counter juncture.

Violation: The exhaust cover above the juice machine was dusty.
Recommendation: Ensure that decks, bulkheads, deckheads, and attached equipment in food preparation, warewashing, pantries, and storage areas, are cleaned as often as necessary.

Violation: There was a loose deckhead profile strip at the back of the walk-in freezer.

Site: Other-Integrated Pest Mangement Plan
Violation: The integrated pest management plan did not set a schedule for periodic monitoring inspections to include some at night.
