簡介
在美國,西班牙裔族群是增長最快的種族群體。目前對這一群體的飲食評估還缺乏具有文化適用性且有效的策略。爲解決這一問題並提倡預防疾病的健康飲食,我們建立了多種篩檢工具,用來評估墨西哥裔美國人中水果、蔬菜和脂肪的攝食情況。

方法
我們根據墨西哥裔美國人飲食的全國性資料建立了簡要篩檢工具(篩檢工具),然後在面談和實地測試後對這些工具進行了修改。該篩檢工具的執行時間不到10分鐘。從2000年6月到9月,我們開展了一項可靠性研究。在該研究中,有93名墨西哥裔美國人(39名男性、54名女性)兩次完成了該篩檢工具,中間間隔1個月的時間。研究參與者的平均年齡爲36.5歲(分佈範圍爲18至71歲),而且91.4%是在墨西哥出生。

結果
第一和第二次篩檢工具的執行之間,水果和蔬菜的相關性r = 0.64,飲食中脂肪攝食的相關性r = 0.85。另外,水果和蔬菜攝食頻率的估計值與加州西班牙裔的全州估計值相似。報告每周至少服用一次維他命補品的重現性很高;84%的參與者兩次都被分入了同一組別( P <.001)。

結論
本篩檢工具爲評估墨西哥裔美國人的選擇性飲食因素提供了可靠方法。該工具可即刻評分,以向應答者提供反饋資訊。在需要執行簡單而且經濟的評估工具時,比如大規模研究或在社區情況下,這些工具可能有用。
