Unless I misunderstand you, "cut and paste" should fill the bill.  Record
your individual sides as uncompressed WAVs and paste them together.  Then,
create the MP3 from the result.  With mono 78 sides, you should have no
trouble staying under any 2 GB limits--even for a large work.
