There is no specific field or subfield for this kind of information.
Subfield 563 is not appropriate for the use you have in mind, as the
field scope makes clear. The action note 583 might be used to include
library binding as an action, but it isn't appropriate to indicate
whether a book is bound by the publisher.
If your system allows you to retrieve this information from the MARC
holdings record, you might use 866$x (Textual holdings--basic
bibliographic unit non-public note) or 876$x (Item information--basic
bibliographic unit non-public note) to record the binding status. Or if
your indexing needs require you to use the bibliographic record, one of
the 59x fields would do for you. The most important things are that
whatever you decide, the use is consistent, and that it is absolutely
clear that the information relates to your copy.

At the request of the British the UKMARC field 563 for binding
information
has been added to MARC21. My understanding is that it is intended for
rare
book cataloguing.
