A Texas resident, Gail Borden is known as the father of the modern dairy industry. In 1838, he surveyed and laid out the site of Galveston. In 1853, after developing an unsuccessful meat biscuit, he sought a patent on a process for condensing milk in a vacuum. The Civil War intensified the demand for condensed milk. Borden's sales skyrocketed and the establishment of the New Condensed Milk Co. in 1857 began his road to dairy fortune.
