Definition A food product or food additive made from yeast (a fungus). The yeast is pasteurized (heated) to prevent it from growing in a person's digestive tract. Nutritional yeast is used as a source of protein and B vitamins. Some (but not all) brands of nutritional yeast contain vitamin B12. Latin name: Saccharomyces cerevisiae.
