Date Produced: 1991 Description: The goal of the curriculum is to provide child nutrition employees with guidelines for incorporating sanitary food practices in the workplace. This is done through a series of 14 modules that uses lecture, overheads, videos, and activities. The USDA video "Food Safety Is No Mystery" is used in some of the lessons (not included in curriculum). Several other videos are optional- no information on how to obtain these videos is given. The National Restaurant Association's "Applied Foodservice Sanitation" is used as a background text (not included in curriculum). The curriculum was designed to offer food sanitation certification to participants if desired.
