Description: This 67 page packet is available in PDF format to view or download. The packet contains 8 lessons on the implementation of HACCP in foodservice operations. Each lesson will run about 30 minutes and could easily be scheduled as part of regular inservice training. HACCP implementation is viewed as "going on a journey" with each principle of HACCP considered as a stop. The trip is ongoing because foodservice operations are constantly changing. The goal of these lessons is to ensure the service of safe food by integrating a HACCP program into school foodservice programs.
