Research Project: HUMAN BIO-ABSORPTIVITY OF BETA-CAROTENE FROM CUCUMIS MELO FRUIT

Objective:
Determine bio-absorptivity of beta-carotene from low and high carotene rich Cucumis melo (melon) fruit via a human intervention (feeding) trial.

Approach:
Locally, commercially grown melon cultivars, preselected for significantly high vs. low fruit beta-carotene levels, will be processed in a food safe facility then fed to human volunteers for determination of post-feeding blood carotene levels.
